Yummy Enchiladas
A few posts ago I wrote about how much I love taco night dinner and how it is always a huge hit with my family. Another great dinner night and a favorite with my family is Enchiladas night which is a spin on taco night. Like tacos, they can be made individually and with a variety of ingredients. You can even make each enchiladas with different ingredient for each family member.
What you need to start (I make 5 enchiladas with these ingredients)…
soft flour tortilla shells - 5
enchiladas sauce - 1 large can
cheese - 1 bag
What you can add to each …
chicken, beef, steak, beans, or even cooked rice (You can use anything for the main ingredient really) - I use about a half a pound to 1 pound depending your taste.
peppers, onions, or even tomatoes (the choice is yours) - I use 1 of each
Directions
Cook the meat (if using meat) first.
Place enough meat in each soft shell to make enough for your family.
Drizzle enchiladas sauce on each shell with meat.
Put on remaining ingredients (tomatoes, pepper, onion).
Next comes the cheese (I like a lot of cheese on mine).
Roll each shell and fold in the sides. Put in lightly greased baking pan (can be glass or aluminum).
Put the remaining sauce and cheese on top of each enchiladas.
Bake at 425 for about 10 min. (varies depending on oven).
