Gorgonzola Fettucini Alfredo
Fettucini Alfredo is one of my favorite dishes and it is a true comfort food. I remember my mother making the dish for me and she would add special touches to the very popular dish. Sometimes she would use spinach fettucini or other flavor pasta to the recipe to add to the flavor. Now that I make this dish all the time, I try to change the recipe sometimes to make each diner a little different so we don’t eat the same stuff all the time. A friend told me to add different cheeses to the dish to make it different, so I added gorgonzola and it was delicious.
Ingredients…
Garlic (to your liking)
6 tablespoons unsalted butter
1 3/4 cups heavy cream
8 oz. gorgonzola cheese
1 cup parmesan cheese
parsley, salt, pepper
Fettucini pasta
* can add Chicken or shrimp
Directions…
Cook pasta by box directions.
Saute garlic in butter in a sauce pan.
Add cream to butter.
Add salt and pepper.
On medium heat, stir until slightly thickens.
Add 6 oz. of gorgonzola cheese to mix and stir until melts.
Add 1 cup of parmesan cheese to mixture and stir.
Pour over cooked pasta.
Put 2 oz. of gorgonzola on top of pasta.
Sprinkle on parsley and more parmesan cheese.
* you can add cooked shrimp or cooked chicken to the dish as well.
